How to make crispy baked fish in tomato sauce

Fish & Tomato Sauce
- 675g cod or haddock (filleted and skinned)
- 1 small onion
- 1 clove garlic
- 1-2 celery sticks
- 1 tin tomatoes
- pinch of salt if desired pepper
- 1 level teaspoon sugar
- 1 teaspoon of vegetable oil
Topping
- 1 teaspoon of vegetable oil
- 50g white or brown breadcrumbs (2 slices)
- 25g of low-fat grated cheese
Method
- Pre-heat the oven to 200°C / 400°F / Gas Mark 6.
- Wash and dry the fish, then cut into neat pieces. Place in a lightly greased shallow ovenproof dish.
- Tomato sauce: Heat oil in a small saucepan. Stir in the finely chopped onions, garlic and celery. Cook for 2-3 minutes until the vegetables soften but have not become coloured. Add the tomatoes, sugar, salt and pepper and bring to the boil, stirring all the time. Cover and simmer for 10-15 minutes, stirring occasionally.
- Meanwhile prepare the topping. Heat oil in a small saucepan. Remove from the heat. Using a fork, stir in the breadcrumbs, then mix in the grated cheese.
- Pour the tomato sauce over the fish. Sprinkle the topping evenly all over.
- Cook for 30 minutes until the topping is crisp and brown.
